Oh my! This is one of those grab it out
of the pantry and wow your family or guests
kind of recipes that people are going to swoon over!!
These little nuggets -
Ok - these fat, luscious nutggets
of garlic bread filled with cheese are
out of this world.
And guess where we got the recipe?!!
COSTCO!
Yup!! This is one of those walk through
Costco stores and get something fabulous
to try and then you have to buy items!
My daughter even told them that she
didn't like grilled cheese, but after she
tried a bite, she said, "Maybe I do like grilled cheese!"
The star of the show is this
Chef Shamy Gourmet Garlic Butter that
they were featuring at Costco.
Simply spread thick bread, we used
Costco's thick sliced French Bread Loaf
but Texas Toast would be great with this
fabulous garlic butter (and yes, this is made with
real butter, not some nasty substitute) on the
outsides and layer the inside with a nice thick
layer of shredded cheddar cheese (of course we
used some from Costco!)
Then place it on a griddle that is heated to
about 325 degrees. You don't want it too hot
as this makes a thick sandwich that will take
some time to melt. Flip it when golden and
grill on the other side. If you want, you can place
a large saucepan lid over the sandwich to help
the cheese melt.
Of course you could make your own
garlic butter! It is the garlic butter and
the thick bread that made the croutons
out of this world so even if you don't have
a Costco, or if yours doesn't have this
Garlic Butter, you can make these
luscious nuggets, or just eat it as a grilled
cheese sandwich!
When the cheese is hot and gooey, carefully slice
the sandwich into croutons and place in the
middle of a bowl of Tomato Basil Soup
(also from Costco) and you have a fabulous
meal. (Or make your own soup!) Talk about
easy and fantastic!
You might have to keep adding croutons
because really, the soup is just a dip for the grilled
cheese, right?
We had this for our lunch after skiing
at Sundance
and it was outstanding.

It looks like a trip to Costco is needed! I love to go there on a Saturday afternoon and "graze" on the goodies they're showcasing. I love to dip my grilled cheese in my tomato soup anyway, but I've never thought of actually making croutons with it. Will definitely have to try it with the garlic butter- I hope my Costco has it! :)

We have a place in Florida and worry about that occasionally. Your place in Cabo is gorgeous and I am so happy you have managed to get back to normal so quickly! ReplyDeleteOK, I've just added this to the shopping list for when we go to Costco next time. I've not seen this garlic butter there, but perhaps because I wasn't looking for it. Now my eyes will be wide open in search of it so that I can give it a try. Sure, I could make my own garlic butter, but why go through the trouble when Costco has it and it's good? :-) I can think of a bunch of ways to use it, especially during these frosty winter months! My husband and I are both grilled cheese lovers, and this sounds "mm, mm good!"

I wonder if this garlic butter has made it up here to our local Costco yet? Sometimes things are a tiny bit slower. The soup and croutons sound delicious - just right for a grey and foggy west coast evening.

ReplyDeleteI love that butter. Why make your own when Chef Shamy's is so good. The grilled cheese samples is worth walking around the freezer section in circles just to get a few tastes. The snow at your cabin is gorgeous.
