Oven Dried Tomatoes



I love to grow Roma Tomatoes
as they are so dense and prolific
and fit well into all of my recipes.

This year I decided to make some
dried tomatoes and have made three
batches already as we have just been
gobbling them down as fast as I
make them.



My Romas this year were really long
and I cut them into slices and drained
them on paper towel for a few minutes
to absorb some of the extra juice.
Turn them over and do the other side.


Place the slices on a piece of parchment paper
and then brush them with just a touch
of olive oil.  I chose Trader Joe's Basil Olive Oil,
but you could use any.


I seasoned half of them with a little
Montreal Steak Seasoning and the 
other half with sea salt and fresh ground
pepper.

Of course I preferred the ones
seasoned with Montreal!  There 
is that punch of garlic and herbs.
Yum.

Place the baking sheet in a preheated 275
degree oven for about one hour.  They were
still a little moist and bendable.  Then let
them sit out uncovered overnight.  They
dried to the perfect texture.

We have had them on the counter for a
snack and have used them in an Italian
chicken dish



salads,



and also on homemade pizza.






Yum!  We are using them up as 
fast as I make them.


These are so quick and easy and you
pay such a fortune for sun dried tomatoes
so try making your own in the oven.

  4. They look delicious!! I don't have any Roma tomatoes, how do you think others would do? Also, I am looking for a tried and true pizza crust. Yours looks fantastic. Can you share the recipe?

  5. Great idea, Jacqueline! I was planning to use my dehydrator to dry tomatoes, but the process is rather complicated - it takes up to 3 days, and you have to rotate the trays every 6 hours. Your way sound MUCH easier. Going to bookmark this post. Thanks!

    It took me way too long to get here and thank you for your kind words upon your visit two days ago!!! School started and my days are full and my nights are spent flopping on the couch and making zzzzzzzzzzz!

    Trader Joe's Basil Olive Oil is so great. We frequent TJs their products make the best addition to a great meal. I must use dried tomatoes in my Italian and Southern French recipes! I used to dry my own back in the day of pre-graduate studies, and now that I teach, I barely can eek out a homemade pizza!

  10. OH, GOODNESS! We love these things, though I haven't made any in quite some time.

    And the picture of the about-to-bake pizza with the flame in the background---you know, I used to belong to a cooking-and-restaurant blog which had some exquisitely-amazing photos and dishes. One day, my reply was, "Couldn't you just DIVE into that trifle?"

    From then on, everybody would caption every beautiful, gotta-have-a-taste dish with "DIVE!"

    That pizza awaiting the fire is a DIVE of the first magnitude. Save for the uncooked crust, I think I'd have just gotten a spoon.
