Did we ever have fun today!
Mixing cookie dough into play dough colors and then
making Easter egg cookies out of those vibrant colors
and finally finishing them off with a nice center of frosting
was too much fun!
My daughters had made some chocolate sandwich cookies
together the other day and gave me some and I just couldn't
keep my hands off of them. I had been wanting to make
some egg shaped cookies and the yumminess of their
sandwich cookies got me started.
(I picked up an egg shaped cookie cutter at the grocery store.)
I wanted to make them in a variety of fun spring colors
and decided to make 5 colors.
It is really hard to judge the color of the finished cookie by the
color of the dough. They seemed a little dark to me but
once they baked they all lightened up just enough.
The only one I would have changed is the one in the bottom
left hand corner - it was supposed to be a bright spring green and it
really lost its color while baking.
These were so easy to make and after sitting in a covered
container for a day, they were even better
I just made them using a Betty Crocker White Cake mix.
I used two cake mixes and split the finished dough into
5 bowls and colored each one separately with gel food
coloring.
Cake Mix Sugar Cookies
1 box Betty Crocker White Cake Mix
1 egg
1 cube (1/2 C.) butter, almost melted
gel coloring
Mix all of the above in your mixing bowl.
Divide and color as desired, mixing the gel coloring
in by hand. There is no need to chill the dough.
Roll out on parchment paper using no
flour. This way you can roll and re-roll and the
dough stays the same. The parchment will get
a little greasy so change it as needed. Simply lift
the parchment paper to help you peel off the cut out
cookie dough and transfer it to a cookie sheet covered
in parchment paper. I love this dough because it is so
easy to work with and holds its shape so well. We love
the flavor too.
Bake at 350 for 7 minutes. It should just look dry on the top.
You don't want the bottoms brown.
Let cool. Then frost. I piped the frosting on, starting
with the outside edge and filling in to give it a smooth
finished look on the outside. Top it with another cookie.
Store in a covered container.
This was such a happy baking project as the colors were
so pretty.
My daughter Jessica was baking them with me and she came
up with the idea to make the striped cookies. We later
sandwiched those also. Of course, those were the ones
chosen first by the little people!
My Fitz and Floyd bunny platter is the perfect spot for
serving these up. These were an addition to our Easter Egg hunt
lunch and they were a big hit.
These are definitely worth making and I can think of all
kinds of other ideas using vibrant cookie dough to
make everyone smile!
