Bacon Wrapped Stuffed Chicken - Pinterest Week



It all started one week night when I was trying to
decide what to make for dinner.  I really love to
cook (but not clean up) but I don't love to decide
what we are having.  I decided to just open my
Pinterest Recipe Pantry and choose something.
This Bacon Wrapped Chicken caught my eye
and I had all of the ingredients - that was really important as I
had no intention of running to the store.


When I pound chicken, I place it in a plastic bag,
but not tightly sealed so that the bag doesn't pop
open.  Then I use my french rolling pin to evenly
pound the raw chicken thin.


The recipe called for garlic and chive cream cheese but since I only
had plain cream cheese, I decided to add my own 
flavorings so I chopped a little chives and added some
granulated garlic.


I found the recipe on Blogchef.net.  Bobby is the author of

Bacon Wrapped Stuffed Chicken

6 boneless skinless chicken breast pieces
(pounded thinly)
8 oz. cream cheese
2-3 T. finely chopped chives
1/4 tsp. granulated garlic
12 pieces partially cooked bacon
(I used the precooked bacon from Costco)
I like to use the precooked or partially cooked
bacon so that the bacon still isn't raw when 
the chicken is done and I don't like wiggly bacon.

Preheat oven to 400 degrees.  
In a medium bowl mix the cream cheese,
chives and garlic. 

Spread the thinly pounded 
chicken breasts with the cream cheese mix.

Roll the chicken breasts up from the narrow end
and set aside.  
Place the precooked bacon on a plate covered
with a paper towel.  Top with another paper towel and heat
in the microwave for 1 minute to soften the bacon.
Now wrap the bacon around the chicken.
Secure with toothpicks.

Season with a little sea salt and freshly ground pepper.

Bake at 400 for
about 20-25 minutes or until the juices run clear.


(This is the uncooked chicken.  See how the precooked bacon
is already brown and mostly cooked?  You will to just warm 
it up a little in the microwave so it will be flexible enough to
wrap around the chicken.)



Oh, when you slice it open, you get the creamy
goodness of the cream cheese and the salty crunchiness
of the bacon in each savory bite.  Definitely a keeper!
This was delicious and simple and is certainly
company worthy.

I have a lot of people tell me they don't like recipes
they have tried on Pinterest.  I tell them that just 
because the picture looks great doesn't mean the
recipe is going to be great.  Sometimes you may want to
tweak the recipe a little to make it so you like it (like
using the precooked or partially cooked bacon) but 
we thought this recipe was great.

  15. This is so great, Jacqueline! I am always looking for chicken recipes because we love it and it can get so boring. I think I've exhausted every good recipe I have. So I'm going to try this! The cream cheese filling sounds great as does the bacon. I don't do Pinterest so thanks for passing this along!

  16. This does look good, Jacqueline! Cream cheese and chicken seems like an odd combination but I like all the ingredients so I'll give it a try. I don't like wiggly bacon either. When I order it in a restaurant I tell them, if it's burned, it's still not too well done! And I agree that many recipes online, not just Pinterest, look better than they taste, especially the big commercial sites. That's why I come here--I have always enjoyed your recommendations. I made the red velvet cake last Christmas to rave reviews!!! Linda

  27. I tried three pinterest salads on Sunday. They were similar to ones I had made before. Everyone thought the dressings on the family versions were better. Today I made 2 vegan recipes for Taylor's from pinterest...they would have been good with chicken. :-). I'll let you try them first from now on I think and follow you.
