Avocado Salsa

I love this time of year when the
 tomatoes are abundant in the garden!  With
so many tomatoes we
had to make a batch of our favorite salsa-

Avocado Salsa

This salsa is unusual because of all 
the goodies - the avocado, green chilis
and sliced black olives, but I think the
secret is the unusual kick of the
apple cider vinegar!

I had a friend make this years and years ago
and had to get the recipe and it has been on
the family favorite list for ages!  

I love getting recipes from friends and
every time I make the recipes, it makes me
think of them!  Are you a recipe collector too?





Avocado Salsa Recipe

4-5 tomatoes (I used red and yellow from the garden)
1//2 white or yellow onion
2 large avocados
1 small can chopped green chilis
1/2 small can sliced black olives
4 T. light olive oil
1 T. apple cider vinegar
1 1/2 tsp garlic salt
1 tsp. onion powder

Dice the tomatoes and the onion.  Place in a 
medium sized bowl.  Stir in the chilis and olives.

In a small bowl mix the oil, vinegar, garlic salt
and onion powder with a whisk.  Stir it into
the tomato mixture.

Dice the avocados and gently mix in.  You don't
want to stir it again as the avocados will begin
to fall apart, so just gently mix them in at the
end.

Serve with chips or we love it in
pork tacos too.
