These Strawberry Cream Muffins are one of our family's
favorite. It reminds me of a Strawberry Shortcake in
one package.
Fresh strawberries are diced and added to the batter.
Each one is a pop of flavor.
I topped the muffins with pink sanding sugar. The crunch
of the sanding sugar is a fun addition.
Strawberries And Cream Muffins Recipe
2 C. flour
1 T. baking powder
1/8 tsp. salt
Whisk the dry ingredients together in a medium sized bowl.
2 eggs
1 C. light cream
6 T. butter or vegetable oil
1 C. superfine sugar or regular sugar
1 tsp vanilla
In a medium bowl, lightly whisk eggs and add the rest of
the wet ingredients. Mix together with the dry ingredients.
1 C. strawberries
Gently fold in the strawberries. Fill the
muffin cups 2/3 full. I like to make jumbo muffins, so
this will make 6 jumbo muffins. If you make regular sized,
this makes about 12. Top with sanding sugar if
desired.
Bake at 400 25-27 minutes for jumbo muffins or 20
minutes for regular sized muffins.
These are fun split while they are warm and topped
with whipped cream and additional sliced strawberries
if desired.
