We have been making these chocolate chip cookie
sundaes for years and years. They always are a big hit,
but I received these cute cast iron skillets as a gift
from my daughter's sister in law, Lis and they are
a lot more fun than putting the cookie in a small tin or
a disposable foil mini pie pan! Besides, they are huge
and I love to make desserts that people can share -
probably 2 on this one.
The company that makes these 7 inch pans calls them Skookies,
for skillet cookies. You can find them on Camp Chef's
website by clicking here.
Or you can make them as I described, in a small tin or a
disposable foil mini pie pan.
For the warm chocolate chip cookie I used a variation
of a Mrs. Field's cookie. Do you remember when her
stores were in all the malls? We had never had chocolate
chip cookies like that before - so full of chocolate. She
revolutionized chocolate chip cookies.
Mrs. Field's Chocolate Chip Cookies
(from Mrs. Field's I Love Chocolate Cookbook)
Preheat oven to 350.
In a large mixer bowl cream:
2 sticks, or 1 C. softened butter
1 C. packed dark brown sugar
1/2 C. granulated sugar
Beat in:
2 eggs
2 tsp vanilla.
In another bowl whisk together:
2 1/2 C. all purpose flour
1 tsp baking soda
1/4 tsp salt.
Add the flour mix to the butter mix. Beat
until combined. Then add 2 C. semi-sweet chocolate
chips (or whatever chips you prefer).
Spray the Skookie pan with Pam and
press about 3/4 C. dough into each pan. Bake
for 10-12 minutes. These are best if they are a
little underbaked!
Remove from oven.
Have your husband scoop you 3 perfect balls of
rich vanilla ice cream - have you tried the Kirkland brand
from Costco? It is the smoothest, richest ice cream but it
packs a whallop of fat grams too. We went ahead and
used it since we were indulging!
Top with Hot Fudge Sauce, whipped cream and chocolate
shavings.
Super Simple Hot Fudge Sauce
Melt in a microwave safe bowl for 1 minute
1 C. semi-sweet chocolate chips
1 cube (1/2 C. ) butter
Stir and melt for another 30 seconds if needed.
Add 1- 14 oz. can sweetened condensed
milk and 1/8 C. milk and stir until blended.
Heat through.
I think the Skookies are best served warm, so you might want
to make the ice cream balls ahead of time and place them
back in the freezer to harden up.
Indulge in one!

Yum. I've had them by the name of Pizookie ( for pizza cookie) but I love those little pans for them! Have only had them in the disposable aluminum pans.

ReplyDeleteWish I'd seen this before I baked cookies last night. It looks like my dough could have gone on to better use! Aside from a small discrepancy in the amount of salt, that cookie recipe is the same as the one on the back of Redpath brown sugar bags -- my favourite, no-fail recipe!

I have seen these fun pans at Tai Pan and have almost bought them. I do remember the Mrs. Field's craze -- yum this looks soooo good! Joni

ReplyDeleteOh goodness- these look AMAZING! This is incredible- you know- recently when our power was out with the storm... (ugh... that one I just posted about a week or so ago that did all the damage)- we tried to make cookies on the stove top because the oven doesn't work without the power- but it didn't work all that well- the cookies didn't really cook much- I guess we should have had one of those wee pans! Thanks for sharing this! :)
