Wicked Witch of the West Cupcakes & A Winner

"I'm melting! Melting! Oh, what a world, what a world!"
says the Wicked Witch of the West as she melts
into oblivion.

These adorable Wicked Witch of the West cupcakes were
featured in the October 17th edition of Women's Day
Magazine.

Beaulah is a good witch, so she had lots of fun creating
these cupcakes of a wicked witch, and then
watching the little ones gobble them up!

They especially enjoyed the fondant hats and shoes.

This witchy was sporting sandals for the warmer weather.

We ended up with a whole coven of witches,
some in shoes, some in sandals and some in
high topped boots, all melting away.

Oops, one of our little monsters wanted in on the pictures
too!

Wicked Witch of the West Cupcakes

Make any cupcake of your choosing.
Frost with chocolate frosting.
Sprinkle on grated chocolate or crushed cookie crumbs.
Decorate with fondant.

Legs:  Use a lime green to color the fondant.
Roll into a 5 inch rope, using cornstarch to keep
it from sticking.  The cornstarch will wipe off.
Cut the rope in halves for the legs.

Shoes:  Use a purple to color the fondant.  Form
a small ball using cornstarch to keep it from sticking
and shape into desired shoe shapes.

Hats:  Use black to color the fondant.  Using cornstarch
roll the fondant out and cut with a small scalloped
biscuit or cookie cutter.  Each hat takes two rounds,
one for the brim and one for the cone.  Roll the
second piece into a cone and use a little water to
attach it to the brim.

Assembly:  Frost and dust the cupcakes.  Place on
serving platter.  Position the shoes, then dip the ends
of each leg in a little water to attach them to the tops
of the shoes.  Press the thigh end of the legs into
frosting on cupcake.  Top with the brim of the
hat and then add the cone.  Bend the cone in desired
shape.

Easy Delicious Fondant

1-2 T. water
food coloring
8 oz. marshmallows (about 36)
1 lb. powdered sugar (about 4 C.)
1 tsp. almond flavoring (or your choice)

Place the water, 1/4 to 1/2 tsp. food coloring
and marshmallows in a microwave safe bowl.
Heat on high for 1 minute.  Stir to mix.
Place in a heavy duty mixer, like a Kitchenaid
using the batter paddle.  Add the powdered
sugar and flavoring.  Mix until it is smooth and
pulls away from the bowl.  It should have the
consistency between play dough and bubble gum.
Add a little water if needed (start with 1 T.) or if
you get it too wet and it won't hold its shape, add a
little powdered sugar.  Place in a plastic ziploc bag.

Mixing the color in with the water makes it really
easy to color your fondant.  The black took more
like 1 1/2 tsp. to get it this black.  My usual recipe
is double this amount, but I cut it in half as I wanted
to make 3 different colors.
