Ice Cream Sandwich Cake & A GIVE AWAY

It's time to celebrate!!!


Last week I announced I had my 100th follower and

by the end of the week I was up to over 140!

Like everyone who blogs before me,
I didn't think anyone would read  my blog.

Thank you to all of you who have supported me
and commented and encouraged me.

I always tease my husband and tell him
I  am going to visit with my

Cyber Friends.

Truly you have been so much fun to get to know.

Blogging has been such an exciting adventure.

I owe it all to my fabulous sister Joni
at
Red Couch Recipes
who got me started blogging.
I told her I wanted to just be a guest on her
blog but she said, no I had to do my own.

Thanks Joni, you are the best.
Your blog has been so inspiring to me.
In honor of all of the wonderful bloggers
out there I decided to feature someone's recipe
that caught my eye.

I had a great time at
Kitchen Bouquet's Ice Cream Social.
Everything was mouthwatering,
so
this week I decided to be a COOKER,
not just a
LOOKER
 I gave into temptation from Beth at
Food As Art with her version of Duggar's Ice Cream Cake

The description is what hooked me in -
two layers of ice cream sandwiches with fudge,
 caramel sauce, and crushed candy bar in between,
topped with whipped topping and garnished
with additional candy bar and chocolate.

What sinfully delicious ingredient has been left out?

We headed right out and got everything we needed.

I enlisted the troops to help with unwrapping the
ice cream sandwiches and crushing the Skor bars.
I think that is one of the funnest jobs to smash the
candy bars.
Begin by placing one layer of ice cream bars on the bottom
of a 8x8 inch pan.  I used a slightly larger oblong ceramic
dish because it was so much prettier.  You can cut extra
sandwiches to fit your dish.  Mine used 5 across the bottom.

Next drizzle on fudge and caramel sauce and top with your
favorite candy bar.  We had Skor bars on hand so we used
them.  I used 2 1/2 bars in the center and only
about 1/4 C. sauce, otherwise it might get too sweet!

Top with another layer of ice cream sandwiches then cover
the whole thing with whipped topping or whipped cream.


Garnish with more candy bar and a drizzle of chocolate
don't use too much or it might get too sweet.

Place back in the freezer for a couple of hours to harden.

Use a sharp knife dipped in warm water to cut the cake.


My son-in-law took one bite and told his wife that he wanted
this for his birthday cake on his next birthday!

I would call that rave reviews. 

Some neighbors stopped by on a Sunday evening walk
 and we promised them some.  It was too hot to carry it
home so we drove it over later.  They weren't home.

Alas, my other daughter and her friend saw it in the
freezer and now there is nothing left!

Should'a grabbed a fork right then and there!
Ya snooze, ya lose!!

  2. Yummy recipe. I have had a version of it before but this looks so good. I would make vanilla ice cream and add some seasonal fresh fruit. We have made peach ice cream many times here in Georgia since we are the Peach State.

  3. I'm a brand new follower! Our Cuisinart ice cream freezer bit the dust this year :( I haven't had the cash to replace it so I'm crossin' my fingers that I'll get this shiny new 2 qt one!!!
    I would definately make vanilla ice cream with a little greek yogurt. It would be great with a few fresh strawberries or peaches mixed in. mmm I can taste it now.

    I want to make Buttermilk-Peach ice cream, and I have to make all my own because of sugar issues. I have found that I can control my blood-sugar best when I use liquid stevia...so this fabulous freezer can possibly lengthen my life!

  27. Love your blog Jacqueline...it seems like a million years since we lived nearby and my Sara babysat your kiddos. I have been out of town for the last 3 weeks and really enjoyed catching up on all your wonderful posts. I drool just looking at all the yummy photos. Best wishes to you and your family!!
    Here's my ice cream recipe:

    BROWNIE PEANUT BUTTER ICE CREAM
    2 cups milk
    1 cup sugar
    1 cup peanut butter
    1/4 tsp. salt
    4 cups light cream
    1 cup chopped salted peanuts
    1 Tbsp. vanilla
    Have 2 cups crumbled brownies. In a blender container, combine milk, sugar, peanut butter and salt. Blend til smooth. Transfer to a large bowl. Stir in cream, peanuts, and vanilla. Freeze in ice cream maker, then add crumbled brownies. Top with peanuts, crumbled peanut butter cups, and chocolate syrup drizzles.
    Enjoy!!

    And, so does the ice cream maker! I would definitely make a chocolate ice cream of some sort. My kids think making homemade ice cream is so fun.
    Here's a quick and easy recipe: Your favorite carbonated drink (I used orange crush) and 1 can of sweetened condensed milk. Mix your milk with some of the drink to get it incorporated. Put in the maker and add more of the drink (to the line). Make according to directions with the machine. Enjoy!!

    I would make chocolate ice cream with york patties that would be served in something beautiful from either taipan or tjmaxx :)

    If I had an ice cream maker (I used to have one, but I loaned it out years ago and haven't seen it since), first thing I would make is your homemade root beer ice cream. My mouth was watering as I read the recipe. Then I'd try my mom's super yummy homemade apricot sherbet.

  66. 2 cups milk
    2/3 cups cream
    3 egg yolks
    3/4 cups sugar
    1 cup fresh lavender blossoms


    Combine milk, cream, and lavender blossoms in a large sauce pan. Gently warm mixture on medium heat until foamy. In a separate bowl mix eggs until blended & thick. Add sugar to eggs, stirring well. Strain milk/cream, remove lavender if desired. Add 1/2 cup of warm milk/cream mix to eggs, Blend. Add the rest of milk/cream mix to egg mix in the sauce pan. Cool completely in refrigerator, before placing mixture in an ice cream maker!

    Coffee Ice Cream with Espresso Brittle

    2 cups heavy cream
    2 cups milk
    1/2 cup coffee beans roasted for 10 minutes at 400°F and crushed
    8 egg yolks
    3/4 cup sugar
    1 recipe Espresso Brittle (below)

    In a medium saucepan, heat the cream, milk, and crushed coffee beans to just under a boil. Remove from the heat and let stand at least 1 hour for the beans to infuse their flavor. In a medium bowl, whisk together the egg yolks and sugar. Pour the cream mixture into the egg yolks, whisking until well blended.

    Return this mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens slightly, enough to coat the back of a wooden spoon. Strain the custard through a fine mesh sieve and chill. Freeze in an ice-cream maker following the manufacturer's instructions. When frozen but still soft, transfer the ice cream to a stainless-steel bowl and swirl in the chopped brittle with a spatula. Cover the ice cream tightly with plastic wrap and freeze. Garnish with the remaining shards of brittle, when serving, if you like.

    Espresso Brittle
    Yields about 1 cup.

    1 cup sugar
    1/4 cup water
    2 Tbs. espresso beans, crushed with a rolling pin or chopped in a food processor to medium-fine crumbs
    1 oz. (2 Tbs.) butter
    Pinch salt

    Line a baking sheet with kitchen parchment and spray the parchment with nonstick cooking spray or grease it lightly. In a medium heavy-based saucepan, combine the sugar and water.

    Heat over high heat, swirling the pot occasionally (don't stir it) for even color, until it turns light amber. Add the crushed espresso beans (don't worry if the sugar seems to foam), swirl them around in the caramel, and continue to cook until the caramel turns brown. Remove the pan from the heat. Carefully whisk in the butter and salt (the butter will sputter).

    Immediately pour the brittle onto the prepared baking sheet, quickly tilting the baking sheet to get the brittle to flow into a thin layer (be careful -- the brittle is very hot). As it cools and slows down, use a metal spatula to spread it into an even thinner layer. Let cool. Chop two-thirds of the cooled brittle into small pieces by sealing it in a plastic bag and smashing it with a mallet or rolling pin. Sift the crumbs in a strainer if you don't want the powder. Break the remaining brittle into shards and use them to garnish bowls of the ice cream.

  107. Mmmmm, how could you not follow when you open to a cake like that! It looks incredible! I would make cinnamon ice cream. Of course you have to have peach cobbler to go with it too. I would love to get one of these as my kids love ice cream and it is so fun to make. My maker is on it's last legs. You have to yell over it to have a conversation.
