I am not a big breakfast eater. It is too early in the morning
for me, but I love breakfast foods for lunch, brunch or dinner.
This is French toast we made in Lake Powell.
It was made with grocery store bakery French bread
sliced thickly and quickly dipped in typical French
toast batter of eggs, milk, sugar, vanilla and cinnamon.
It is topped with fresh sliced strawberries and fresh bananas.
There is no need to sweeten the fruit as the syrup will do that for you.
There are many variations of this syrup.
I was first introduced to it as Dutch Syrup.
I have one friend who makes it with buttermilk and
another who makes it with cream.
I bet you can guess which one tastes richer!!
I usually make the buttermilk version.
I will give you both and
let you have your own taste testing.
We will start with Sue Ellen's version.
Buttermilk Syrup
1 C. melted butter
1 C. buttermilk
2 C. sugar
2 T. light corn syrup
Bring the above to a boil in a large pan -
a 5 quart one will be great because
as you add the next ingredients, it is going to grow
and grow fast!
Boil for a minute or two then add:
2 T. vanilla ( I prefer Mexican vanilla for the stronger flavor)
1 T. baking soda (some people like to reduce the soda a little)
It will be completely foam and I like to serve it then, but after
a little while it separates into mostly syrup.
Either way tastes great, but the foam is fun for everyone.
You can see the foam starting to separate.
When you are done, if you have any left,
you can keep it in the fridge and reheat.
Here is the cream version
My friend Kathy calls it Jon's Syrup
(she got it from Jon.)
Jon's Syrup
1 C. sugar
1 C. whipping cream
1/2 C. butter, melted
1/2 tsp. baking soda
1 tsp. vanilla
Place first 3 ingredients in a large pot
as it will rise quickly when soda is added.
Bring to a boil and reduce to low and simmer
for 10-15 minutes (I usually just bring mine
to a boil and boil for 2-3 minutes).
Add the soda and the vanilla. Stir well to blend.
Try both and let me know which one
you prefer.
It is perfectly acceptable to
lick your plates when you finish. If
friends and family object, tell them you read
it on the internet (especially if it is this good).

ReplyDeleteI have seen recipes for this syrup before, but have never made it. It looks rich and wonderful. I think I may just have to give it a try this week, as I have both pancakes and waffles scheduled and I'd hate for my kids to get bored.;-)

ReplyDeleteI just read the post below this one, and while I have never heard of Lake Powell, it looks GORGEOUS. I can see why you would want to spend your vacations there. What beautiful scenery! I'm a big water lover and spent all of my younger life in the water (swimming and water skiing). Now I tend to just like to be near it. Lakes, rivers, the Gulf, or the sea... all work for me! ;-)

I don't think I've made this for a while...don't remind Tyson. I think (I know) we've been missing out. Maybe we will have it for dinner this week. The pictures makes it look to die for.
